The traditional dish of the inhabitants of Gradara has a unique name - "Tagolini with Bomba", which was prepared in poor peasant families of the simplest ingredients. This name comes from the following way of cooking: on a small amount of butter, onions and bacon (lard) are roasted. At the same time, thalolini is cooked in salted water (the dough should not contain eggs, only water and flour). After 5-7 minutes, drain very little water, leaving a larger part of the water in a saucepan. Pasta with water pour into a pan with fried bacon and onions. Add a little pepper. The water that has fallen on the hot oil causes the effect of a large amount of steam. And for this reason the dish is called "Tagliolini with a Bomb."
